It’s time to start thinking about back to school and what are the kids going to eat for breakfast and what are they going to take for lunch? My boys are both grown now, but back when they were in school they never cared much for school lunches. Both were fairly picky eaters until they were older, and I had to come up with tasty things that they would eat and that could be packed in a lunch bag.
Purchase a good thermal lunch bag, it may cost you $10 to $15, but it will be worth it in the long run. Check out the deals that Thermos has to offer on their website for lunch sacks.
Purchase a good thermos, something that won’t break if it’s dropped. The Thermos Element 5 Travel Mug will set you back about $35, but it will keep your hot items hot for up to 6 hours and your cold items cold for up to 8 hours. A smaller Thermos model is the compact beverage bottle which will hold up to 16 ounces and set you back about $25. A wider mouthed version of the compact beverage bottle, is the stainless king food jar, which costs about the same amount and comes with its own full size stainless steel spoon.
Buy good quality, airtight containers to store your sandwich ingredients, and you’ll be all set to enjoy delicious, nutritious, fresh, homemade, and best of all, inexpensive lunches at work or school.
Asian chicken wraps
Ingredients:
1 Tbsp. canola or vegetable oil
1 pound boneless skinless chicken breast or thighs cut into 1/4-inch thick slices
8 ounces fresh snow pea pods
8 ounces fresh bean sprouts
1 small (about 1/2 cup) red bell pepper, cut into thin strips
1 small (about 1/2 cup) green bell pepper, cut into thin strips
1 clove garlic, finely minced
1/2-inch fresh ginger root, peeled and minced
3 cups long grain white or brown rice, cooked
6 flour tortillas (8 to 10-inch), warmed
Directions:
Heat oil in large skillet until hot. Add garlic and ginger, reduce heat to low. Add chicken and increase heat to medium-high; cook 3 to 4 minutes until no longer pink.
Add red and green bell peppers; cook until tender, but not soft (they should still be a little crunchy). Add snow peas; cook until tender-crisp. Add bean sprouts; turn off heat and remove from burner. Stir in rice. Spoon about 1 cup rice mixture into each tortilla, wrap up and serve immediately.
Yield: 6 servings
Rachael’s Recipe Notes:
These wraps make a great packed lunch for school or work. Roll up the tortillas in plastic wrap, package up the filling in a small, airtight container or ziplocking bag. At lunch time, microwave the filling (if you want to eat warm) for a few seconds, then microwave the tortillas in plastic wrap for a few seconds, just until warmed.
If you prefer to use a flour tortilla, they work just as well as whole wheat. If you can find chipotle or other flavored wraps such as garlic or spinach, they are a nice addition.
Instead of buying store bought salsa, take advantage of the many local farmers markets and purchase fresh ingredients to make your own salsa. You can make your own lower in fat refried beans for this wrap. They’re better for you and taste better than the ones that come in a can.
Southwestern veggie wraps
Ingredients:
6 whole wheat tortilla (10-inch size)
3 cups chunky salsa
1-1/2 cup refried beans
1-1/2 cup shredded Cheddar or Colby cheese
1 medium to large avocado, cut into 12 slices
1/2 small red onion, thinly sliced
3 cups alfalfa sprouts
Directions:
Spread the refried beans thinly over the entire tortilla. Sprinkle the cheese over the beans. Arrange the avocado and onion slices over the cheese. Spread the salsa over the onions and avocado. Sprinkle the sprouts on top of the salsa.
Roll the tortilla: take one edge and tightly roll it into the center; continue tightly rolling the remainder of the tortilla until reaching the opposite edge. Using a serrated knife, cut the tortilla roll diagonally in half. Yield: 6 servings

The Herschell Carrousel Factory Museum is a vital part of Western New York’s cultural and historic community. The museum’s collection is filled with rare

Unfortunately, she loved it in a consuming kind of way. She ate it.
I loved my alpaca hat because not only was it super warm, it was super soft. I don’t like wool, so I was skeptical when Mary Ann of A Stroka Gene-us told me that alpaca wool is different than lamb’s wool. It has shorter fibers or some such thing, and it isn’t itchy.
Well feeling was believing and I bought this great hat, which is called a “chullo” hat, and wore it walking the dog all last year.
The dog must have been secretly coveting my hat the whole time because the minute I left it in her reach, she ate it. She devoured the tassels completely and finished off one ear flap before I discovered her taste for alpaca was a bit too literal.
Thank heavens that I could replace it with another hat from A Stroka Gene-us. I will not be leaving this prized possession in the dog’s vicinity as I have learned that she has a thing for my alpaca hat as much as I do.
I, however, do not usually eat my hat.

There’s more good news about the drive to raise the funds needed to renovate the “North Wing” of the Medina Memorial Hospital’s 30-bed Residential Health Care Facility. The first Children’s Gallery Class took place this morning, and what a great
way to kick-off the series! We learned about the early origins of carrousels in
the medieval period, and how the days of knights and dragons continue to show
up in carrousel horse design. Kids really got into the time period making
armor, swords, and shields–and of course having a dueling tournament.

July 14: A Carver’s Creation. Talented woodcarvers crafted Allan Herschell
carrousels. Learn how they did it, and try your hand at carving a simple horse
